Indeed, a colder temperature causes a slower and gradual maturation of the the fruit and the considerable difference in terms of winter and summery temperature reduces the attack of parasites and illness, making the anti-parasites treatments unuseful.
These peculiarities of the weather, territory and ground conditions, with a particular collection, contribute in a decisive way to create a special Oil which is the result of an accurate procedure of cultivation and of a strict control of each phase of the production, from the collection to the press and to the stock of the bottles.
